Voodoo Shrimp Shack Earns Top Honors at St. Augustine Festival

Voodoo Shrimp Shack, a Fernandina Beach based food truck, made quite the impression at the St. Augustine Lions Seafood Festival on March 25th and 26th. Despite being a new player in the area and a first-time vendor at the festival, Voodoo Shrimp Shack was among the top contenders and left the festival with several awards.

The festival, which took place in St. Augustine, FL, featured some of the best seafood vendors from all over the country. Voodoo Shrimp Shack’s Amelia Island Shrimp Roll won the First Place “Blue Ribbon” award for best shrimp dish at the event. Made with locally-sourced, wild-caught Northeast Florida shrimp, the dish is served on a split-top butter-toasted bun with homemade pickles. Showcasing the quality and taste of Amelia Island shrimp and supporting our local shrimping industry is a core value of Voodoo Shrimp Shack, and they are honored to see this recognized by the judges.

The Tuna Poke Roll also won the First Place “Blue Ribbon” award for best fish dish at the festival. The offbeat dish features chunks of Yellowfin tuna in a light soy marinade topped with wakame seaweed salad and crunchy chow mein noodles. It is drizzled with sweet soy unagi sauce and sriracha wasabi aioli for a unique and delicious flavor.

Voodoo Shrimp Shack’s Pig & Shrimp Roll also won the Second Place “Red Ribbon” award for overall best seafood dish, while their booth won the Second Place People’s Choice “Red Ribbon” award for the favorite vendor at the event. These accolades are a testament to the hard work and dedication put in by the Voodoo Shrimp Shack team.

Owner William Frederico expressed his gratitude for the recognition and thanked the judges and festival-goers for their support. He also announced that Voodoo Shrimp Shack will be appearing during the upcoming Isle of Eight Flags Shrimp Festival at Mocama Brewery in Fernandina Beach all weekend Friday May 5, Saturday May 6thm and Sunday May 7. Voodoo Shrimp Shack at K-Bay Mardi Gras Festival, Kingsland GA 2023

We just had an absolute blast with y’all Kingsland at the K-Bay Mardi Gras Festival in Kingsland, GA this past weekend February 24th & 25th! We felt like we were in the heart of the French Quarter, surrounded by all the colors, music, and energy of the carnival season. Our team fell in love with your awesome town and people.

The energy at the festival was contagious, and we loved seeing everyone enjoying themselves and letting loose. It was so much fun to be a part of such a great community event. We saw some incredible outfits and masks, and really enjoyed chatting, laughing, and feeding y’all Maine-Style Lobster Rolls, Amelia Island Shrimp Rolls, and Butterscotch Beers – the cream moustaches were epic!

We want to give a big thank you to all of our customers who came out and celebrated with us. Y’all are the reason we love what we do! And a special thanks to the festival organizers at K-Bay for putting together such a fantastic event.

We’re already looking forward to next year’s Mardi Gras festival. Until then, keep an eye out for us on the streets, and let the good times roll!

Dickens on Center 2022 Downtown Amelia Island

What a fun weekend at the Dickens on Center holiday event in historic downtown Fernandina Beach! Our annual festival transforms Fernandina Beach into a Victorian wonderland. It was a wonderful way to get into the Christmas spirit, and our staff even got to dress up in Victorian-era costumes,

The Voodoo Shrimp Shack team had a blast serving up Maine-style Lobster rolls, Amelia Island Shrimp Rolls, and our famous Butterscotch Beer. We were located right across the street from the Green Turtle, so we got to watch and listen to amazing live music all weekend. A few beers also may have made their way into the truck for us to enjoy. We loved seeing the smiles on everyone’s faces as they savored every bite of our delicious food. And the cream moustaches were epic!

I am grateful for the warm welcome we received from the community and visitors alike. It was an honor to be a part of this event, and we’re already looking forward to next year’s Dickens on Centre festival.

Are You Ready to try Crispy Fried Shrimp Legs?


It is shrimp. Battered in seasoned flour. Fried golden brown and delicious. It looks something like fried shrimp.

Except there are tiny shrimp legs sticking out of it.

Meet the tastiest secret shrimp recipe you never heard of.

So, where do shrimp legs come from?

Amelia Island is a mecca for seafood lovers. Local fishing boats offer wild-caught shrimp netted just a few miles from the beaches. It is the best-tasting shrimp around. Our shrimp is so fresh it comes with the head still attached.

Most people discard the shrimp heads and eat the tails. What a waste! A food this special deserves to be treated with reverence.

I use every part of the shrimp. I cook the tails in traditional ways. I make shrimp stock with the shells.

Then we have the lowly shrimp head.

There is this part in the shrimp head – under the shell, behind the eyes, and in front of the tail. Anatomically, it is the same part of the crustacean you eat in blue crab. A tender bit of shrimp meat with legs attached.

Once you know how to extract this piece, all you need is breading and hot oil. Ta-da! Crispy fried shrimp legs.

Fried shrimp legs are nothing new in the food world. They are called “sea spiders” or “sea scorpions” in Louisiana and other regions. They are common in Asian cuisines.

However, unless a person is in on the joke, they are not going to order something called “sea spiders” from a menu. A little re-branding never hurts. If we call them fried shrimp legs, there is a chance folks will try them.

Indeed, fried shrimp legs taste like fried shrimp. There is this nugget of tender shrimp meat. The legs get super crispy and essentially shatter when you bite into them. It is akin to eating the crisp tail on a whole fried fish. They are truly magical. The question is: are you brave enough to try them?
